Turkish White Bean Recipe

Recently, I met with a Turkish family friend (Ezo). She shared with me how she grew up eating a plant-based diet around the Mediterranean region of Turkey and how Turkey has many vegan options: green beans, vegetable soup, and fruit-based dessert are just a few of them. She said that eating a plant-based diet made her very conscious of the world around her and she felt better connected with the earth. She made a white bean recipe, and I am attaching pictures and a recipe of it below. I hope you enjoy it as much as I did!

Recipe:

  • 1 can cooked white or cannellini beans
  • 1 cup green snap peas (with shell)
  • 4 tbsp. Oil
  • 1 can tomato sauce
  • 1 cup of tomatoes sliced
  • 1/2 cup of red onions
  1. Cook the oil, tomato sauce, onions, and tomatoes over medium heat.
  2. Once onions are fragrant, add beans and snap peas.
  3. Add salt and pepper for seasoning.
  4. Serve warm and enjoy!
