Recently, I met with a Turkish family friend (Ezo). She shared with me how she grew up eating a plant-based diet around the Mediterranean region of Turkey and how Turkey has many vegan options: green beans, vegetable soup, and fruit-based dessert are just a few of them. She said that eating a plant-based diet made her very conscious of the world around her and she felt better connected with the earth. She made a white bean recipe, and I am attaching pictures and a recipe of it below. I hope you enjoy it as much as I did!


Recipe:
- 1 can cooked white or cannellini beans
- 1 cup green snap peas (with shell)
- 4 tbsp. Oil
- 1 can tomato sauce
- 1 cup of tomatoes sliced
- 1/2 cup of red onions
- Cook the oil, tomato sauce, onions, and tomatoes over medium heat.
- Once onions are fragrant, add beans and snap peas.
- Add salt and pepper for seasoning.
- Serve warm and enjoy!
